Olive oil

deco-4-min-1024x678We grow olive trees of the Picual and Arbequina varieties. All of our oils are strictly monovarietal and there is never any mixing of varieties and crops. Our olives are pressed exclusively by mechanical processes within a few hours after they have been harvested. The rapid processing guarantees top quality and low acidity - around 0.1% depending on the weather during the year.

We often admit, without being modest, that olive oil production is rather a matter of the heart in our family. After years of corporate and consumerist life, we decided to return to our roots and pursue something that is purely meaningful and healthy. However, we are also very fond of pointing out very often that we are not just any oil seller.

We are first and foremost a big family, and only in this way can we offer an original and genuine product that we produce with love and care.

 
 
 

products-olive-min-1024x731Olives, capers and pickles

We offer several types of olives: black, green, pitted and unpitted. Because the Spanish are fond of olives with pits, you will find only one pitted olive here. Black olives are sold only with the pit: a proper olive of this type is so soft that the pit cannot be removed. Instead, you can choose from confit black olives (slightly dried) and black olives in brine. For lovers of spicy food, we have prepared green olives in the traditional Mojo Picon paprika-garlic brine.

Our specialities are Arbequina olives, which are also used to make our oil, and Hojiblanca olives, which we pickle in Mediterranean spices. None of our olives are over-salted and the only thing they have in common with the ones you get in the supermarket is their name. You can also taste our capers, which we pickle in sea salt and vinegar.

Gourmets will appreciate sweet and sour pickles: perhaps as a bit of exoticism in Christmas potato salad.

 

Almonds

mandle-3-min-1024x678Among the rows of our olive trees, there are also almond trees. Their fruit is harvested from mid-August to the end of September. As with the olive harvest, tarpaulins are stretched under the trees, into which the almonds then fall.

We take them from our friend Manuel, who has been growing almonds all his life, and whose orchards are located in the vicinity of the Sierra de Baza and Sierra del Pozo mountains in the province of Granada, Andalusia. At first glance, you will see the difference from ordinary almonds: Ferragnes almonds are unusually large, plump, light brown and have a unique sweet almond flavour.

We always have almonds from the current harvest, and only natural ones. No salt, no pepper. The shells are removed just before import to the Czech Republic, so they are beautifully fragile.

 

 
 

 

deco-14-min-350x250Wine reduction and sherry vinegar

Try our strong vinegar with a splash of red wine, which flavours salads perfectly. You can add our wine reduction (arrope) to it.

It is basically a mulled grape juice that is beautifully thick and blends the flavours of caramel and raisins. It is ideal for cheese, fruit, salads or white meat. If you mix the reduction and vinegar, you get a delicious balsamic vinegar.

 

 

 

 

 

 Tuna and salmon fillets in extra virgin olive oil, Roasted peppers

We have combined two amazing flavours: our olive oils and premium tuna and salmon meat. We marinate these two fish in our Arbequina extra virgin olive oil, which you can use in salads or pasta.We hand-cut the tuna and wild Alaskan salmon into fillets. Not only do they taste great, but they also provide an impeccable supply of Omega-3 fatty acids. And we think of vegetarians too: we pickle peppers in our spicy Picual oil. Without preservatives, salt or spices.
